American Pancakes

Easy, American-style, fluffy pancakes are great for feeding a family at breakfast or brunch on a weekend. Top these pancakes with butter and maple syrup, with or without rashers of streaky bacon.
Ingredients
- 200 g self-raising flour
- 1/2 tsp baking powder
- 1 tbsp sugar
- 3 eggs
- 25 g melted butter
- 200 ml milk
- Vegetable oil for cooking
- Maple syrup
- Streaky bacon (optional)
Method
- 1. Mix 200 g self-raising flour, 1/2 tsp baking powder, 1 tbsp sugar, and a pinch of salt together in a large bowl.
- 2. Create a well in the centre with the back of your spoon then add 3 eggs, 25 g melted butter, and 200 ml milk.
- 3. Whisk together either with a balloon whisk or electric hand beaters until smooth then pour into a jug.
- 4. Heat a small knob of butter and 1 tsp of oil in a large, non-stick frying pan over a medium heat. When the butter looks frothy, pour in rounds of the batter, approximately 8 cm wide. Make sure you don’t put the pancakes too close together as they will spread during cooking. Cook the pancakes on one side for about 1-2 mins or until lots of tiny bubbles start to appear and pop on the surface. Flip the pancakes over and cook for a further minute on the other side. Repeat until all the batter is used up.
- 5. Serve your pancakes stacked up on a plate with a drizzle of maple syrup and any of your favourite toppings.
Overnight Oats

Overnight oats are a no-cook breakfast option I have begun making regularly for my wife and me. I soak porridge oats in a combination of milk and Greek yoghurt overnight, allowing them to soften and absorb flavours.
Ingredients
- 1 tsp Baileys caramel sauce
- 50 g porridge oats
- 1/4 tsp powdered cinnamon
- 60 ml (or 1/4 cup) milk
- Salt (optional)
- 1/2 banana, sliced or other toppings
- 2 dsp Greek yoghurt
- 1 tsp honey
Method
- 1. The night before serving, add the caramel sauce, oats, cinnamon, and milk into a screw top preserve jar with an optional pinch of salt.
- 2. The next day, loosen with a little more milk if needed. Top with yoghurt, banana, and a drizzle of honey.
