Pumpkin Turkey Chili

Ingredients
- 1 large onion chopped
- 1 green bell pepper chopped
- 2 carrots peeled & chooped
- 3 cloves garlic minced
- 1 lb ground turkey
- 1 (15 oz) can pumpkin
- 1 (14.5 oz) can diced tomatoes (optionally with green chiles added)
- 3 cups chicken broth
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/8 tsp ground cinnamon
- 1 (15 oz) can black beans
- salt and pepper to taste
Instructions
- In a pot with some oil over high heat, cook onion, bell pepper, carrots, and garlic until onion starts turning slightly translucent and veggies start becoming tender.
- Set heat to medium. Add ground turkey and a pinch of salt and pepper, breaking up and stirring into veggies. Cook until turkey has no pink left.
- Add chili powder, cumin, cinnamon. Optionally add another pinch of salt and pepper.
- Add pumpkin, chicken broth, and diced tomatoes to pot. Stir chili and turn the heat to high.
- Once the chili has come to a boil, stir in black beans.
- Reduce the heat and let simmer for 20-30 minutes.
- Stir chili and serve.
