Onion Soup

Servings: 3

Ingredients

• 6 medium yellow onions (sliced into strips)
• 1/4 cup butter
• 3 tbsp flour
• 3 cups water
• salt and pepper to taste
• (optional) bread crusts or croutons (preferably homemade bread)
• (optional) shredded cheese to taste

Instructions

• Melt butter in frying pan
• Cook onions in frying pan on medium-low heat until caramelized, stirring about every minute
• Once onions are caramelized, add flour to frying pan and mix in frying pan at medium-low heat to make an onion roux
• Put cooked onion roux into a pot and add 2 1/2 cups of water
• Bring water to boil and add salt and pepper to taste
• Let soup boil for about 3-5 minutes, stirring occasionally
• Serve soup in a bowl, optionally adding some bread crusts or croutons and cheese to top of soup
