Pumpkin Bread

Servings: 3 Loaves

Ingredients

• 1 cup margarine
• 3 cups white sugar
• 4 eggs
• 4 3/4 cups flour
• 2/3 cup cold water
• 4 cups cooked pumpkin (or 2 cans of pumpkin)
• 1 tsp salt
• 1 tsp nutmeg
• 1 tsp cinnamon
• 2 tsp baking soda
• 1/2 cup raisins
• 1 cup walnuts

Instructions

• In a bowl, mix margarine and sugar, add eggs one at a time and mix well.
• In a different bowl, add spices, salt, baking soda, and flour together.
• Mix the spice/salt/soda/flour combination to egg mixture alternately with water.
• Mix pumpkin, raisins, and nuts into the egg mixture.
• Bake at 350 degrees for 1 hour or until it passes the "clean toothpick test", where sticking a toothpick into the bread and taking the toothpick out results in a clean toothpick.
