Mixed Salad

This salad contains no salad, but it's fresh and fulfilling.

Contains no fat other than the ingredients, so it's good for a long day outside.

Ingredients - serves 4

• 1 cucumber, diced
• 1 can of black beans, rinced
• 125g corn
• 1 red bell pepper (capsicum)
• 200g cherry tomatoes
• 50g fresh coriander, sliced
• 1 green lemon
• 1 avocado, diced
• salt and pepper to taste

Instructions

• Add cucumber, beans, red bell pepper, cherry tomatoes and coriander in a big bowl.
• Press the green lemon juice onto the mix
• Add the diced avocado
• Salt and pepper to taste
