Pancakes
My partner seems to have developed an intolerance for gluten. She can still eat it, but feels bloated, gets headaches. So for shared meals, we do gluten free. For the two decades prior, I made homemade pancakes every Sunday. This recipe isn't written down anywhere; it's just in muscle memory. I'm writing it down here so I don't forget.
Dry ingredients:
- 1c flour
- 2 Tbsp sugar
- 1 tsp baking powder
- 1/2 tsp salt
Wet ingredients:
- 1c milk
- 2 Tbsp canola oil
- 1 egg
- 1 tsp vanilla (optional)
Whisk dry ingredients together. In a separate bowl or measuring cup, whisk wet ingredients. Combine wet and dry and whisk until the biggest lumps are gone.
Cook in a non-stick pan on low heat. Makes 6-8 large pancakes.
