Emily's version of a V60

Supplies

Scale up to 2kg in 0.1g incriments
V60 (plastic is better imo, less heat loss)
V60 filter (we have a hemp reusable fliter that I love)
Mug with over 400g capacity
Burr Grinder (never buy preground beans unless you absolutely have to. Fresh ground beans are always better)
Begin by preheating your mug with hot water (preferably the same temperature you're brewing your coffee at)
Weigh out your coffee
Grind your coffee to a medium, medium fine grind
Empty your mug of water and place your mug on a heat resistant pad on your scale with your V60 atop your mug and the filter inside the v60
Preheat your V60 and Filter the same way you did your mug with the filter open inside the V60
Add your coffee grounds to the V60
Begin your bloom stage. Your bloom stage stands to release any Carbon Dioxide gasses in the beans. You can typically tell how fresh your coffee is here but it's not for certain, the best way to know is to buy fresh locally roasted beans and use them within a few weeks. If you don't go through coffee that fast I recommend portioning out a weeks worth of coffee in mason jars and pulling the jar out the night before and letting thaw overnight so you don't introduce coffee beans and water to each other DO NOT TAKE BEANS IN AND OUT OF THE FREEZER.
Your bloom stage is a 1:2 ratio of coffee:water, going over a little is ok just never exceed a 1:3 ratio
Pour your water to the appropriate weight, begin your timer at the exact same time your water hits the grounds
Give your V60 a swirl, make sure in your swirl there are no dry grounds
Your bloom begins from when the scale registers water has been poured in, wait 30-40 seconds (including the time it takes to swirl the V60)
Once your bloom is finished, begin pouring at a very even rate. We want the water in slowly, somewhere around 5g-10g a second. (Cannot confirm the weight per second, have not actually tested what my weight per second is)
typically you want all your water in around or before the 2:00 minute mark, once all your water is in give your V60 a stir with a tea spoon or the back of a soup spoon
Wait until the coffee is about 2/3-1/2 of the way down the V60, Give it one final swirl
Your Pour over should be done in about 3:30-3:45, any more than that and you might over extract resulting in bitter coffee. Any less than 3:00 will result in fine drinkable coffee, but it will lack complexity and sweetness throughout the cup. Knowing your grinder is important
