I recently read that the development of the Gemini protocol had already been completed (someone correct me if I am wrong), if this is true I ask the question “am I right to leave it as is” or “there is always something to improve”?

I think it's perfectly fine to leave Gemini where it is, it seems complete to me. The only time an update may be needed would be if there were some security issue, i.e. a future change to TLS, etc. · 4 months ago
Afaik it is the general consensus that the Gemini specification is complete and fitting the purpose. It has been kept simple and clear with a view on making it not prone to commercialization. No cookies and tracking allowed, ever. So yeah maybe you can propose some minor improvements to Solderpunk (the maintainer if I am right) but do not expect a development trajectory as it happened for http protocol. That would
