Tea Loaf

- 500ml (not 400ml) of 4-teabag tea
- 250g raisins
- 250g sultanas
- 300g self-raising flour
- 160g brown sugar
- 2tsp mixed spice
- 1tsp cinnamon
- 1tbsp baking powder
- 1tbsp cider vinegar
Soak the fruit in the tea (with the tea-bags) for at least 5 hours, then mix the ingredients into a thick batter. Separate and bake in two loaf tins at gas-mark 3-4 (170C) for 45-50 minutes. It usually takes a little longer in my oven. Occasionally it sinks (probably due to a slightly too thin batter), but it still tastes good. It might need tweaking over time to reduce the amount of sugar, as it's quite sweet for me.
