Baked Home Fries

• Prep time: 10 minutes
• Cook time: 40 minutes
• Servings: 4

Ingredients

• ~3 lb od potatoes
• 1 tsp garlic powder
• 1/4 cup of olive oil

Instructions

• preheat the oven to 425 degrees
• Wash and peel the potatoes
• Cut the potatoes into 3/4 in. cubes
• In a large bowl toss the potatoes and garlic in the olive oil. Coat all the sides of the potato cubes with oil.
• Gently lift the potatoes from the bowl and lay in a single layer onto a baking pan.
• Place in over.
• After about 20 minutes (when tops are brown) turn over the potatoes to brown the other side.
• Check after 15 more minutes. The potatoes should be soft. If not continue baking checking occasionally.

Notes

Baking time depends on the type of potato and the cube size.

I omitted adding salt and pepper prior to baking. You may want to add that step.
