How to cook Chickpeas

The chickpeas will triple in size one they are soaked

Soak the beans

• time required: 12 hours
• remove anything that doesn't look like a bean.
• add beans to lagre bowl of water
• add several inches of watre, they triple in size.

To Cook

• add beans to large pot
• cover beans with several inches of water
• bring to boil
• reduce to simmer
• choices:

Lid on = soft beans

Lid off = firm beans

• cook for 1 to 1 1/2 hours
