Onion bhajis
Ingredients
120g gram flour
¼ tsp chilli powder
½ tsp turmeric
½ tsp baking powder
salt
½ tsp cumin
1 large onion, thinly sliced
1 green chilli, deseeded and finely chopped
30g coriander, finely chopped
oil for frying
Method
1. Sift the flour, chilli, turmeric, cumin, baking powder and salt into a large mixing bowl. Add the chopped coriander, onions and chillies and mix well.
2. Gradually add enough water to the flour mixture to form a thick batter mixing it so the onions are well coated.
3. Put oil in a deep frying pan to a depth of 5cm (making sure the pan is no more than ⅓ full). Heat the oil until a small amount of batter added to it rises to the top, bubbling and browning.
4. Carefully drop a few spoonfuls of the mixture at a time into the hot oil and fry for 3-4 minutes, turing once, until the bhajis are crisp and brown. Lift out, drain well and keep warm on kitchen paper while cooking the remaining bhajis.
5. Serve hot.
