Mincemeat

Ingredients

  200g apples, grated
  200g shredded suet
  200g soft brown sugar
  200g currants
  150g raisins, chopped
  150g sultanas, chopped
  100g candied peel, chopped
     1 lemon (zest and juice)
 ½ tsp nutmeg
 ½ tsp mixed spice
2 tbsp brandy

Method

1. Mix all the ingredients together. Prepare the apples last to prevent discolouration.

2. Leave, covered, for a week. Stir daily.

3. Place into sterilised jars, making sure there are no air pockets.

4. Cover and seal the jars.

5. Mature for at least three weeks before use. It should keep for a year.
