Chocolate orange truffles
75% cocoa solids chocolate seems to work best in this recipe. For most people 85% cocoa solids will need some sweetening with icing sugar.
Ingredients
225g plain chocolate
110ml cream
25g butter
2 dsp orange juice
zest of 3 oranges
cocoa to coat
Method
1. Warm the cream, butter, orange juice and zest until it starts to boil
2. Remove from heat
3. Add pieces of chocolate stirring all the time
4. Keep stirring until quite cool
5. Chill in fridge for about an hour
6. Make into small balls and roll in cocoa
Makes about 25 truffles.
