Cheese and spring onion soup

Ingredients

For each person:
     1 thick slice of bread
1 tbsp grated cheese
     6 spring onions
 1 tsp flour
400 ml bouillon
2 tbsp single cream
       salt and pepper
       butter

Method

1. Fry the spring onions, without browning, in butter until soft.

2. Add the flour, stir and then add bouillon.

3. Add salt and pepper as desired and simmer for 10-15 minutes.

4. While the soup is cooking, fry the bread in butter until lightly browned.

5. Put a slice of bread in each soup bowl and sprinkle cheese on top.

6. Take the spring onions out of the bouillon and share amongst the bowls.

7. Add the cream to the bouillon and pour over the bread, cheese and onions.

8. Serve immediately.
