Blueberry muffins
Ingredients
110g plain flour
110g butter
70g caster sugar
2 eggs
1½ tsp baking powder
125g blueberries
pinch nutmeg
Method
1. Cream the butter and sugar together then slowly add the eggs, mix well.
2. Add the flour, baking powder and nutmeg. Stir to combine.
3. Refrigerate for at least an hour, preferably overnight.
4. Preheat oven to 200C.
5. Place a spoonful of muffin mixture into each muffin case, filling each to just over half way. Stud each muffin with blueberries.
6. Bake 20 minutes, or until golden on top.
