Bakewell pudding
Serve warm with hot custard or cream.
Ingredients
175-225g puff pastry
115-175g sieved strawberry jam
115g caster sugar
6 egg yolks
85g butter
115g ground almonds
a few drops of almond essence
Method
1. Roll out pastry, line a shallow pie dish and prick the base.
2. Cover the base with the sieved jam.
3. Melt the butter.
4. Beat together the egg yolks, ground almonds, sugar and almond essence; then mix in the melted butter. You should have a smooth batter.
5. Pour the batter over the jam.
6. Bake at 180C for about 30 minutes, until golden brown.
Serves three to four.
