how I made them once
a frying pan
a cake pan
1 pound pork sausage
1 pound of monterey jack cheese
8 fajita-sized tortillas (about 7 inches in diameter)
1/2 medium sized onion, diced
8oz cream cheese
15oz can of green enchilada sauce
1 tbsp butter
an unreasonable amount of spices like uh, garlic powder, pepper, chili powder, pepper flakes, paprika.
butter in the frying pan with onions at like, 74.5% heat until partially brown.
then add the ground sausage. you know how to cook sausage right? until it isn't pink anymore.
add all those spices in while it cooks.
when the sausage is no longer a health hazard, turn the heat off and add the cream cheese. mix well.
put half of the enchilada sauce into the cake pan.
slice the blocks of cheese into pieces that cover most of the diameter of the tortilla.
spoon some of the ground-pork/onion/cream-cheese stuff onto it and spread it almost to the ends.
wrap the tortilla around the filling.
roll the enchilada around in the cake pan of enchilada sauce so it is covered.
add more cheese on top of it.
repeat until you run out of filling.
pour the rest of the enchilada sauce on top of the enchiladas trying to cover any remaining bits of dry tortilla.
put it in the oven at 350 until the cheese on top starts to brown.
about 23 minutes.
