Pie Pastry
Ingredients
- 100g Flour per person
- 50g Fat per person (butter|lard|suet)
- Salt
- Dried Thyme
- Ice-cold water
- Egg-wash|a little melted butter or milk
Method
1. Form fine breadcrumbs with the first four ingredients, leaving relatively large pieces of fat covered in flour
2. Bring together with cold water
3. Kneed a little to form a shaggy dough (don't follow the general advice to not over work too religiously; it'll be just fine)
4. Refrigerate for 30 mins
5. Roll out and use, egg-washing top for best results
