ഗുന്തർ ബ്ലോബെൽ പ്രഷ്യയിലുള്ള സിലേസിയായിൽ വാൾടേർസ്ഡോർഫ് എന്ന സ്ഥലത്തു ജനിച്ചു. 1945ൽ അവിടെനിന്നും സാക്സൺ എന്ന സ്ഥലത്തേയ്ക്കു മാറി. 1960ൽ ട്യൂബിങ്ങൻ സർവ്വകലാശാലയിൽ നിന്നും ബിരുദം നേടി. 1967ൽ വിസ്കോൺസിൻ-മാഡിസൺ സർവ്വകലാശാലയിൽനിന്നും ഗവേഷണബിരുദം നേടി. 1986ൽ ഹോവാർഡ് ഹൂഗെസ് മെഡിക്കൽ ഇൻസ്റ്റിട്യൂട്ടിൽ ജോലിക്കുചേർന്നു.
1999ൽ ശരീരശാസ്ത്രത്തിൽ നോബൽ സമ്മാനം ലഭിച്ചു. സിഗ്നൽ പെപ്റ്റൈഡുകളുടെ കണ്ടുപിടിത്തത്തിനാണ് നോബൽ സമ്മാനം ലഭിച്ചത്. പുതുതായി നിർമ്മിക്കപ്പെട്ട പ്രോട്ടീൻ തന്മാത്രകൾ ഒരു അഡ്രസ്സ് ടാഗ് കൊണ്ട് ഒരു തന്മാത്രയുടെ ഉള്ളിൽ അവയുടെ ശരിയായ സ്ഥാനത്ത് ചേർക്കാൻ വേണ്ട മെക്കാനിസം കണ്ടുപിച്ചു.
