wholewheat pancakes
Pancakes but better, in all ways.
There are two ingredients I quite like, freshly ground whole wheat flour and really good extra virgin olive oil (EVOO). I have replaced all other added fats in my cooking with EVOO, even in ice cream!
dry ingredients
- 200g wholewheat flour (1.5 cups)
- 1.5 Tbsp of baking powder
- 2 Tbsp sugar
- 0.5 Tsp salt
wet ingredients
- 1 Cup of alt milk (Generally use soy but others will work)
- 1 Tbsp of ground flax
- 2 Tsp of apple cider vinegar (White vinegar would probably also work)
- 3 Tbsp EVVO
- 0.5 Cup of water
- 1 tsp of vanilla extract/paste
instructions
Mix the milk/flax/vinegar in a small bowl, let it sit while doing other things.
Mix all the dry ingredients together in your large bowl, I do this into a sieve to sift them together but its not a must, the key is to distrubite the backing powder.
Make a well in the dry bowl and pour in your small wet bowl, use the half cup of water to clean out the small bowl and pour that in too. Add the oil and vanilla on top of your well.
Incorporate the wets and drys, you don't want to over mix this as it activates the baking powder, and then they won't rise.
At this point I put my pan on the stove at a low heat (3/10) but yours may differ and let it warm up for 10 minutes while the batter rests, then I lightly oil my pan with some EVVO and turn the heat to 4/10 and start making pancakes.
The whole family loves them.
